The whisky is called “Sweet & Spicy Sauternes – Batch 01”
Maybe you have been to one of the virtual tastings held by Fary Lochan, then you have tasted this in a younger version. The one on the program was in a 6 year version at 46.9% and yet it was not quite the same, because it was from a slightly younger distillate than this one.
Maybe you’ve had a share of one of the Sauternes casks that have been around – but it’s not the same whisky either.

Fary Lochan has had nothing but the two mentioned aging in Sauternes casks and therefore this release is completely unique.

Sweet & Spicy Sauternes Batch 01 is a double cask-aged whisky where the aging has been almost equally divided between Bourbon and Sauternes casks, and is a “non-smoked” version.

Matured for 7 years & 3 months.
First 3 years & 6 months in a 1st Fill Bourbon Barrel
Then 3 years & 9 months in a 1st Fill Sauternes Barrique.

The casks were filled on November 5th 2015 and May 14th 2019 respectively
The whisky is bottled on February 7th 2023 at 57.2% abv

Peated Bourbon is that even real – Oh yes and for a peat head like me this is incredible stuff.

When I saw the bottle of Peated Bourbon I simple had to have it. I had never heard about Peated Bourbon and I was thinking – what in the world would this would be like and I actually had a picture in my head of corn being smoked over peat. Yes, I know crazy to think like that.
Well what is Peated Bourbon and is it actually a bourbon when peated?
Peated Bourbon from Kings County in New York is the first of it’s kind, of what I can find. It is made on a mash bill of 75% Corn and 25% Malted Barley.
So far so good.
The Corn is Organic New York grown and the Malted Barley is from Scotland. Here the barley has been malted and dried with the smoke from peat fire to a level of about 15 ppm.

It is normal that bourbon mash bills are made with malted barley to set off the fermentation proces and in this case we get the peated malted barley to do the job. To legally call American whiskey Bourbon you have to have 51% or more Corn in the mash bill, mature for at least 2 years in new oak barrels. It is not allowed to add colour or flavour. In this case all the bourbon meet all the requirements. The use of malted barley that has been dried over peat smoke is a natural way of drying, so everything is in order.

I bought this bottle in New York in september 2019 – Wow time flies fast, and I really wanted to visit Kings County Distillery, but time was to short for a visit at that time. Then we wanted to go to The Big Appel again in 2020 – but you know too well what happed in 2020 so we didn’t go. I really hope that I one day get the chance to visit the distillery. It has a great history to it, based in a old Navy Yard in Brooklyn. Founded in 2010 and is the first legal distillery since the Prohibition. I will write more about the distillery later and hopefully after a visit

It has taken me some time to open the bottle – Why? – I don’t know, but now it is open and I really like what I am tasting.
This is not very old bourbon, it is at least 2 years old, but you dont get that feeling when sipping it. One of the reasons for this is the use of small casks. They are American New Oak and the sizes used are 5 Gallon, 10 Gallons and 15 Gallons. That will be something like 19 litre, 38 litre and 57 litre. That size cask made of new oak will give you a lot of colour and taste in a short time. A 50 litre cask will in normal Scottish weather mature the spirits in year equal to about 4 years in a 225 litre barrel. So this Bourbon could be tasting like a 8-10 year old bourbon!

It is not a very peated whiskey but the smoke notes are there and the combination with the corn gives it a special experience in taste which I havn’t taste in other peated whiskies.

Would I buy this again? Yes I will

Caol Ila with a different touch of what I have tasted – and I love it.
Right after I opened this bottle of Caol Ila from Golden Drops who has it as an Independent bottler, I tasted some bitterness and my expectations lowered, actually I was a little disappointed -BUT! after some patience I was rewarded.

So my first advise is; Buy the bottle!
Next advice is; Open it, pour a dram and have patience with the first sip a least 20 min.

I do not recall ever having referred to a scent of tomato sauce in a whisky but that was one of these experiences I got. A lovely thick well spiced tomato sauce ready to be poured over a bowl of steaming hot spaghetti. Another scent that surprised me was what I will recall as Marmite – Yes the food spread made from yeast extract. Oh well it is a by-product of beer brewing and high i vitamins
It is this meatiness that for me makes a difference and that it brings other aromas into the picture than other more streamlined whiskies.

It started in a ex-bourbon cask and finished in a first-fill oloroso sherry cask for 2 years. The sherry is not over powering and mingles perfect with the peat smoked barley from Caol Ila and the sweetness from the American oak wood.

So if you like Caol Ila and want a unik Caol Ila taste you need to visit Golden Drops to get your bottle. Only 287 bottle were sendt to the marked – and Golden Drops have them all.

I really enjoy Caol Ila and this one has given me a new angle on what Caol Ila can do. Nice sweetness from the years in the ex-bourbon cask and a spicy touch, dryness and fruitiness from the sherry cask. A really fine combination.

Talisker whisky is something I really appreciate and it is no exception with Talisker 18 years old.

Something special happens with the combination of smoke, sea, sherry casks and time. The heavy smoke in the younger Talisker is lovely and does the job, but this 18 year old has hit something, in my taste absolutely amazing. The softness in this whisky can make most non-smoke fanatics to like smoked whisky. In my optics, it is a shame to give new whisky drinkers the heavily smoked whisky. You should rather serve a good, well-stored pleasant smoked whisky so they can get the experience that it can taste good and not just be a smoke bomb right in the nose and throat.

Talisker 18 years old is a smoked whisky I would serve anyone that want a good experience with smoked whisky, and yes, there are a whole lot of less smoked whiskies that you can start with but saying this 18 year old can turn many.

Talisker 18 years old can sometimes be hard to get hold of and can be a little pricey, but still it does not run off in the same way as other 18 year old ones can do. I think you get really good whisky at a reasonable price.

Wild Turkey Rare Breed is a barrel Proof Straight Bourbon meaning you get all the flavours of Wild Turkey and there is no water added.

Even at a abv of 58.4% this is a really smooth bourbon in my taste. It has a quick burn on the nose but the it turns into toffee sweetness with the lovely vanillas of the wood. The casks are charred pretty heavily and this makes all the sweetness and smoothness come out.

Wild Turkey has the same mash bill for all their bourbons, being: 75% corn, 13% rye and 12% barley and they use almost the same yeast strain as used in the start of their bourbon production era. The yeast is one of the secrets Wild Turkey have and the water used comes from the Kentucky River. The water is naturally filtered though Limestone. This removes the iron from the water. To much iron in the water gives the whiskey a bad and bitter taste.
So with the same mash bill for all the different bourbons from Wild Turkey you get the different taste flavours from the length of storage and where in the barrel houses they have been stored.

I have not found anything about where in the barrel house the Rare Breed has been stored, neither have I found very much on the age, but one of Wild Turkey’s keystones of maturation is that they age more than the minimum and usually also more than five years. It is said that Rare Breed is a mix of barrels that have aged for 6-12 years.

The distillation is continuos and also distilled twice. This is to give more smoothness as well. When they fill the new barrels with the new make it enters at 114 proof which is 57% abv. but hey it is bottled at 58.4% ?
Something does not match…. The short story could be one of two: 1) It actually was filled at a higher abv or 2) When storing in high temperature, water tend to evaporate quicker than alcohol which raises the abv.

A quick conclusion for this Rare Breed is that you get a very good bourbon at a good price. A fantastic taste and it is lovely to nose. I would sip this one neat any time.

Something happens over time from the first batches to the PX Cask we taste today.

Mosgaard has experimented with the different casks and are doing a great job with small 50 liter casks and it is interesting to follow.
This Pedro Ximenez Cask is first matured in new french oak casks and finished in PX casks. Being matured in the small 50 liter casks things happen faster and new wood give power to the tannins in the french oak and colour.

I have tasted Mosgaard whisky from some of the french oak matured that has only matured in these and some of them are absolutly fantastic, one has been released, but only in a very limited numbers. But my point is that the combination of the spices from the french oak combined with the sweetness from the PX cask is a brilliant combination.
In my opinion this PX Cask batch is much more balanced than earlier batches – they were also good but this is beautiful.

It is understandable it won Berlin International Spirits Competition (BISC) Gold medal 2020 and World Spirits awards Gold 2020

The Vikings have brought back with them casks of Rioja wine.

Is it Twisted to mature whisky in wine casks? I think not.

Highland Park Twisted Tattoo is 16 years old and is a marriage of 153 casks laid down between 11th May 2000 and 29th October 2001, filled into 220 liter First-fill Rioja wine casks in January and March 2016 at 59.5% ABV.
70 First-fill Bourbon casks from 1999, filled at strength of between 63.6% and 63.7%. The 223 casks where married together in September 2018 and chill-filtered at 4°C.

The whisky is bottled at 46.7% ABV and has a lovely complexity with to changing palets.
The first taste is sweet creamy vanilla and a clear Rioja feel and red berries.
Then it changes to a more “classic” Highland Park expression with heather, honey, the Hobbister Moor Peat and some spiciness.
A lovely whisky that releases The “Full Volume” Another expression….. but okay.
Anyway the Twisted Tattoo is an interesting whisky with the Twist of the red wine casks.

Did you know Loki, one of the gods in the Norse mythology, had “children”? Oh well, it is a little Twisted
These children are no less than; The Fenris Wolf, Hel and The Midgard Serpent.

Jormungand (The Midgard serpent) was the second eldest child between Loki the Trickster and the giantess Angrboda. Kidnapped by the gods, he was cast into the waters that surround Midgard. There he laid until he grew so large that he ate large whales and was able to wrap himself around the world and bite his own tail.

The design on the bottle is a Tattoo of the Midgard Serpent twisting around a sword.

It is designed by the Danish Tattoo artist Colin Dale.
He is a very talented tattoo artist and modern Viking using the old techniques when tattooing and telling stories on skin.
Colin Dale was born in Canada but his roots are Danish.
A true skilled craftsman with a true Viking Soul.

It is a beast of a fabulous Whisky in the Laphroaig core range. Lore has released the 18 years old. I really enjoyed the 18 years old but this one is a fine replacement when it comes to that.

Knowledge passed down from generation to generation has given Lore the name and the richness.

With whisky matured between 7 to 21 years in a combination of first fill sherry butts and quarter casks you get a spicy peated whisky with a salty mineral taste.

I know there are many opinions on the non age statement Lore vs. price and that it has released the 18 year old, but let it go, just enjoy Lore it is a very enjoyable whisky with a good Traditional Laphroaig taste, a nice deepth of taste.
Maybe not the richest of the rich Laphroaig’s I have tasted but it is nice and I favour it and will recommend it.

There is much very nice whisky in this world and North Star Spirits has brought another to the market which is simply delicious and at the same time with an expression that shows that young whisky is definitely worth looking for. It is only 5 years old, but is round and soft.

Several may want to wrinkle their noses when they see it is a Blended Malt. I just have to say that if they do not want to throw themselves over it, then it is their decision and I think they are missing out on a nice dram.

It is made from whisky that all come from Campbeltown. We are not told which distilleries are involved and I dare not guess the composition, and it also means less to me when it’s something that tastes great.

It could be really exciting to know where it comes from tough, I will admit that, but we will probably never know.
If we are to guess a little anyway, there are only 3 distilleries in Campbeltown; Springbank, Glen Scotia and Glengyle. Maybe this will make it a little easier – I don’t know.

It could be from just one distillery or all three. Springbank is a robust whisky so I don’t think there is very much of this in the dram. I lean more to the fruity and lighter Glen Scotia, but mostly I think it is from Glengyle. It is young, smoky, soft, round, fruity, toffee sweet and with some salty notes. That matches fine with the Kilkerran’s I have tasted.

No matter what, it’s a lovely dram and considering its age it’s amazingly soft, round and pleasant.

I don’t think many outside Sweden know Gammelstilla Whisky but you should look their way.

The distillery is young and have released it’s first whisky in march 2017. The idea for the distillery startede in 2004, but the first production was not ready for maturation before 2014. I will write about my visit at the distillery in another post.

The Gammelstilla Whisky “Isak Mackey” is a beauty at 54.6% ABV matured in ex-bourbon casks. Finished in New Swedish Oak for six months and then again in ex-bourbon for two months.
In total; 3 years and 8 months old Whisky that taste like a 8-10 year old – wow.
They have used 30 liter casks for the maturation.

Gammelstilla Whisky “Isak Mackey” got its name to commemorate the Scot Isak Mackey who in the 1600s came to Gammelstilla to work and he built a small distillery in the town. However, that distillery is not to be found anywhere, but the tradition has been taken up in Gammelstilla again.

They only released 800 bottles of “Isak Mackey”and of course it was sold out when I visited near by. That was sad for me, I just got to taste it at the campsite Årsunda Strandbad.

This October (2017) they will release another 600-800 bottles of a other whisky, they haven’t named yet, in the Systembolag near Gävle in Sweden.
Hmmm I wish I could be there when they do.

It is a fantastic whisky when you think of how young it is.
