No bumps on the road with this one – A smooth clean Speysider with all flowers, fruit and vanilla notes.

I think the setting was loads of more “Hygge” than the dram surprising in burst of taste. Don’t get me wrong it is a nice dram

I was visiting my good friend and picking up some Viking things for some pictures in the making and all natural – the talk turned into whisky talk
A while ago my friend @h.lindstrom wrote me that he was enjoying a dram of Linkwood and he was saving some for me. Lucky me he hadn’t emptied yet and today was the day for a sip.

My nose was meet with a slight waxy note then came all the “classic” Speyside fruity and flower notes. The taste came rolling soft with vanilla, flowers, some citrus and a mix of new leather and grass.
I think if we have had more time this evening and none of use was to go anywhere this could have been the kind of pleasant easy drinking whisky we could have made a large dip into.

This is my first experience with Linkwood. I don’t think it will be my last but when that is said this is not at whisky knocking me over.

It has a nice oily mouth feel and the taste is vanilla, flowerish with the sherry wood taking the lead in the long finish.
In the middle I get some kind of petroleum’ish taste which is a little awkward but over all a nice dram.

Linkwood has not that many core range bottles on the marked and is mostly used in blends. That does not make it a pour whisky at all! Linkwood has one of the whiskies that gives blends complexity. More about that later.

My son had made lunch and subsequently he served a dram I have not tasted before and from a bottler I have not tasted anything from before.

This is a whisky you have to be really patient with. You are greeted with a serious alcohol puff and it burns when you get it in your mouth. Yes, it is 58.6%, but with 10 years behind it, you might expect a somewhat more round experience.

Leave it in the glass, give it some water. Then you get a different experience and it pulls it to another level of taste.

Benrinnes is a Speyside distillery and you get the classic flower notes, but it is a warm flower meadow

Rauff & Fagerberg is a very young Danish company, founded in Odense, in April 2020, by Jørn Rauff and his wife Karina Fagerberg.
I have not been able to find a website for them, but I can see on instagram that there are several bottles to choose from.

Definitely a whisky you need to give time and preferably also some water to open it up. It’s not a whisky I would give someone new to the whisky game. Someone who has tried the whiskies that burn in the mouth and can hold it some time in the mouth will definitely be able to have a pleasure with this whisky and it will be a dram that can last for a while.

A pleasant mild bourbon – oh, sorry – Tennessee Whiskey
Jack Daniel’s Single Barrel Select is made on the same mash as Old No.7/Black Label. 80% Corn, 12% Malted Barley and 8% Rye. The difference here is were the barrels have matured in the warehouse.

Sigle barrels are usually located at the top in the warehouses to give more flavor to the whiskey. I think the Single Barrel Select is coming from the middle of the warehouse as it not as full flavored as the Single Barrel Barrel Strength and has lower price.
This is a very delicious whiskey and I will recommend it. But if you are going for the real good stuff, Go for the Barrel Strength.

Kavalan Concertmaster Port Cask Finish is a whisky I feel a little double with. On the one hand I really like it and on the other hand there are things that repel me.
It’s different, which I like. It is easily drinkable and gives some flavor nuances that are not in other port wine cask-aged whiskies, I also like that.
One of the points where it has some turn off for me, is a perfumed scent which has tones of universal glue. The taste is a bit the same, but to a somewhat more subdued extent.

Port Cask Finish is the first release in the Concertmaster Series.

The name Concertmaster comes from the founder of Kavalan Mr. Tien-Tsai Lee’s passion for Classical Music and he has used other music termes to name Kavalan’s whiskies, like Solist and Conducter.
The concertmaster leads the entire string group, mediates the contact between conductor and orchestra and performs solo violin passages in an orchestral work. This is the finish of the whisky taking the lead in taste.

It has no age statement and you will see that in many of Kavalan’s whiskies. The warmer weather means that evaporation is somewhat greater in Taiwan than e.g. Denmark and Scotland. This contributes to a faster maturation of the whisky.
In Scotland, the angels share is approx. 2% per year and in Thailand it is between 10-12% and can reach as high as 15%, so a lot disappears in a few years, which also means that they can not store for many years.
With the faster maturation, it is said that the maturation in Taiwan will be equivalent to multiplying the years on the barrels by 2.5. So in this case where the whisky is approx. 4 years old, with the increased maturation rate, it would be comparable to a Scotch whisky of about 10 years.

With the maturation in both ex-bourbon and port wine casks you get at whisky with the vanilla notes and the notes from sweet ruby and the more dry tawny port. It says that also Vintage port casks have been used, but I don’t know which influence this will give other than it looks good on the lable – but I am also just a happy whisky drinker, so what do I know about Vintage Port

This is a fun whisky, because just like I bought it, took pictures and tasted it, there was released new rules for Japanese whisky on February 16, 2021.
So is this a Japanese whisky or not…

The Kaikyo distillery is relatively new. They have been producing alcohol since 2016, but have apparently only been licensed in 2017. hmmm although the Yonezawa family how has the distillery have been brewing Sake since 1856 and began distilling Spirits in 1917.
The location of the Kaikyo distillery is in the town of Akashi, at the historic Akashi Sake Brewery. Okay why is it not named “Akashi Distillery”? Well a good reason for this is that there already is a distillery by that make whisky and sake that is called Akashi. It is produced at the Eigashima Shuzo – White Oak Whisky Distillery only about 10 km from Kaikyo Distillery.
So Kaikyo calls their whisky Hatozaki so no one will get confused. I have read that this will change when they release the first Single Malt whisky – Then it will be called Kaikyo Whisky.

Kaikyo Distillery has it’s name from The Akashi-Kaikyo bridge which is not far from the distillery.
With a free span of 1,991 meters, the Akashi-Kaikyo bridge in Japan is the world’s longest suspension bridge and thus 367 meters longer than the Great Belt Bridge in Denmark, which is the world’s third longest with a 1,624 meters free span. The bridge was opened on April 5, 1998 (The Danish bridge opened June 14, 1998)

The name on the whisky – Hatozaki is from a nearby Lighthouse – well not just any Lighthouse, but Japans oldest stone lighthouse that was taken in service back in 1620.

So far so good.

In 2016 by Mossburn Distillers & Blenders, a Scotch Whisky company buys Kaikyo Distillery installed two new pot stills stills made by Scottish Forsythes. Now Kaikyo was ready for future distilling.

There is also a Hatozaki Blended whisky. Maybe I will tell about that in the future, but now it is time to focus on this Hatozaki Pure Malt.

Hatozaki Pure Malt what is this? This is where Mossburn comes into the picture. Hatozaki Pure Malt is a 100% malt whisky sourced from Japanese whiskies, Scottish and from North America – So according to the new Japanese laws on Japanese whisky, this is not a Japanese whisky.

Kaikyo has barrels of whisky from other countrys maturing at the distillery and blend these to get the Pure Malt and the blended of course.
The taste in Hatozaki Pure Malt is young. We don’t get an age statement, and that is fine with me, but we don’t get to know what actually is in the bottle either.
Mossburn is an Independent bottler and distiller that own Torabhaig Distillery on the Isle of Skye. They started distilling in 2017 as well, maybe there is young Torabhaig in this blend? It can be many other sourced whiskies and I don’t think there is very much original Japanese whisky in the blend as there is shortage of Japanese whisky in general.

It is said that all whiskies in this blend is between 5-6 years old and the casks used are Ex-Bourbon casks, Ex-Sherry casks and Mizunara barrels.

Anyway Hatozaki Pure Malt has been vatted in small batches of 20 caskes. This can be 200 – 500 Liter casks and is vatted i a special two stage proces.
First the master blender hand picks all the casks he want to use. Then he makes two Foundation blends and fill this each foundation into one cask to rest. After a periode of time he then marry the two foundations into one and let it rest for a periode of time.
Voila and you have Hatozaki Blended whisky.

In my opinion you need to give this whisky some air before sipping. This will take some of the alcohol burn when you nose. Then it becomes more fruity. It is grassy, malty, light smoked, some vanilla and pear.
The taste is reminding me of something Scotch I have tasted but in a younger version. Maybe that is just an illusion I have knowing that Mossburn is involved in some way.

Well, my conclusion is that is a okay whisky that in some ways get me thinking of a mix of Chivas Regal 12 year old and Label 5 but with more power and more maltyness. Not bad at all, I think I had expected a more round and smooth whisky. I think this one just have to grow with me. Now that I have the bottle it might change me with time – let’s see

Hatozaki Blended Whisky is the same whisky as USA Hatozaki Finest whisky.
Hatozaki Pure malt whisky is the same as USA Hatozaki small batch.

Maybe in 2022 or 2023 Kaikyo Distillery will release a single Malt from the distillery. Some from the first runs in 2017. I think that can be exiting.

Spica Edition number 2 from North Star Spirits. This time 29 years old and a completely different whiskey.
When I first put it to my nose I was not impressed and at first sip I was disappointed. It was anything but what I had imagined.
Spica 20 years old was sweet and filling, this was was next to the opposite.

I poured a little more into the glass and out into the kitchen and did the dishes.
Just over 20 minutes later I was sitting at the table again, ready to give Spica 29 years another chance.

I’m really glad I did – it was a whole different experience. Now came more of the raisins, sweetness, plums and the lovely malt notes I had hoped to find.

In other words, this is a dram you have to honor the length of the maturation time by giving it time to wake up.
If you have patience you will get a nice dram.
You will sometimes be in doubt whether it is a single malt or a blended whiskey you have in the glass.

Open it – Let it wake up with a little air – Savor it

You must leave it at least 15 minutes till it has gotten some air, then it becomes delicious and elegant.
It is very different from its 20 year old predecessor which was very sweet in the taste.

Smaller scale distilling. “Rös Whisky” is a Danish Whisky from a Winery called “Dyrehøj Vingaard” – So this means whisky is not their main product, Wine is and they are good at it.

The winery make other spirits like gin, snaps and so and in 2013 they by coincidence started to make whisky as well. A craft Brewery had made to much Christmas Beer…. hmm and knew they couldn’t sell it. A good thing about this Christmas beer was that had not used Hops, only Barley. The winery got hold of the beer and decided to distille the it and let it mature in casks so it would become whisky.

The Whisky is young, 3 years old, and you can taste it but there is good potentiale in this whisky.

When I nose the whisky it reminds me of new make at first hand but then some sweet christmas cake takes over.
In Denmark we have a honey cake and it is alot like smelling those.

The taste is oranges, ginger, all spice some cloves and vanilla. The finish is medium long and has dominans of all spice and that feeling of new make.

It is a little oily and feels dry on the tongue at the same time.

Now I would like to tell you the facts and numbers of this eksakt whisky, but I found it at a hotel near my home. They only had the minis and no information. I have not been able to find very much on the whisky and I haven’t visited the winery/distillery, yet, to get the full story.
These facts are the closest I can get. I will make another post if I get the chance to get my hands on a larger bottle at the distillery one day.

This is my second Säntis Malt from the Swiss Alps. Distilled at the Locher Brewery in Appenzell.
The first one had matured in old beer casks only but this one has matured in old beer casks and a variation of wine casks. This could be red wine, sherry and port wine all together and you get a feeling of the different casks used. If the beer casks has done anything good for the whisky in this one I can’t figure out but in the finish you can definitely feel a port wine touch.
Why do they use beer casks to mature in? Well one very good reason is that this is what they have at hand. Brauerei Locher is for all a brewery making beer and has done so since 1886

I bought this bottle for a couple of reasons. One is obvious; I had tried one Säntis Malt and had to taste another. One more was because of the combination of beer casks and wine casks and the third reason is of the name “Himmelberg”.

The whisky has it’s name from a peak near Appenzell and is about 1070 meters high. Here in Denmark one of the highest “peaks” is “Himmelbjerget” – “Sky Mountain” directly translated. Denmark is a pretty flat country so the mountain part is a little funny. “Himmelbjerget” has the enormous height of 147 meters above sea level and is not even the highest point – We can go up to 171 meters

Back to the whisky. An interesting dram with a little confusion in the taste but on the other hand that has i’s charm.

From the independent bottler Hunter Laing a Mortlach 11 year old to mark the Twentieth anniversary of The Old Malt Series in 2018.

I can understand why they chose Mortlach because they make some interesting whisky, but I think I expected a little more for an anniversary than this 11 year old.

Don’t get me wrong, it is a nice whisky but I am not blown away with this one. I have had other Mortlach with more taste.
The nose has more to offer than the taste in my opinion and the better experience comes by adding water. This gives it a little more depth and fullness, especially in the scent. It’s a nice bottle to have to show the diversity of Mortlach.
